Pilau Rice
Caribbean seasoned rice
Ingredients
- 1 1/2 Tablespoons pilau masala
- 2 to 3 cups chicken broth
- 1 cup coconut milk
- 1 cup basmati rice
- 2 Tablespoons olive oil
- 1/4 onion, diced
- 1 Tablespoon grated garlic
- 1 Tablespoon grated ginger
- Salt to taste
Directions
In a medium saucepan, bring the chicken broth to a boil.
In a big pot, heat the oil over medium heat. Add the rice and onions. Stir until the translucent color of rice starts to turn white. Add the garlic, ginger, and pilau masala. Keep stirring until the garlic is cooked.
In a separate bowl, mix the coconut milk with 1⁄2 cup of chicken broth. Add the coconut mixture to the rice. Cover the pot and reduce the heat to low. Add the chicken broth 1⁄2 cup at a time to the rice until it is cooked.
